A French cheese modeled after the well-loved Reblochon. It is noticeably softer than its raw-milk counterpart, with a buttery paste that is mellow and grassy.
Reblochon, made with raw milk, is illegal to sell in the U.S., due to the 60-day minimum aging time for the sale of raw milk cheeses. Chablochon, a cheese inspired by Reblochon, is well suited as a pasteurized alternative. The small, delicate wheels are made with milk from surrounding dairies, and have a mild funk that will intensify with time.
