Description
Papillon Roquefort is distinguishable by its white curd and numerous intense blue eyes throughout. Unctuous and supple in texture with a powerful lingering flavor.
The first cheese to recieve AOP protection, Roquefort Papillon is made using age old traditions. Those include extracting mold from rye bread to be powdered over the cheese before aging, which promotes the growth of Roquefort’s intense blue eyes.
MILK: unpasteurized sheep’s milk
