Oloroso vinegar is made from Oloroso sherry, a dry, full bodied sherry made with 100% Palomino grapes that is typically dark and nutty. Using five year aged Oloroso sherry, El Majuelo employs the traditional criaderas and soleras process of transferring vinegar from barrel to barrel that gives it its unique character. Acetic fermentation converts alcohol to vinegar as it ages slowly over two years in American Oak barrels. Amber in color, with a smooth, light-bodied consistency, it is lightly acidic with just a touch of sweetness. Notes of walnut, hazelnut, and exotic spices bring it to life.
