Flaky, firm, shareable, and fun, this kilogram drum of bonito is the perfect way to serve a bunch of guests and wow them in the process.

Like all their bonito del norte offerings, it begins with pole & line caught albacore tuna, brought to the cannery shortly after harvest. Large hunks are hand-cut, gently cooked with steam and salt before over 600 grams of choice pieces are hand-packed into tins and covered with neutral oil.

We love these for parties, or removing the entire contents and gently mixing into a simple salad with chopped green olives, piquillo peppers, lemon, and putting back in the colorful tin for serving along with dots of garlicky aioli.

TASTING: firm, flaky, mild
PAIRING: buttery chardonnay, aged gouda, romesco
INGREDIENTS: Albacore Tuna, Sunflower Oil, Salt
CAUGHT IN: Bay of Biscay

About Arroyabe
With well over 100 years of wind in its sails, Arroyabe is one of the oldest conservas labels and canneries located in the Iberian peninsula. It’s also hails from the Basque country of Spain, whose conserveras are often overlooked for the ones that dot the rías of Galicia, making it special and unique in what it brings to our offerings of Spanish conserva.

It gets its name from its founder, Rufino Arroyabe, who in 1898 began selling fresh fish caught from the Bay of Biscay through a regional barter where locals traded valuable resources like wine and seafood on an open, moneyless exchange.

After a time, his efforts evolved to preserving the rich abundance of sea-born gems from the area, most notably Bonito Del Norte, the mighty albacore tuna that takes its name from the northern seas from which it’s harvested.

Today, Arroyabe still operates with the same family-owned and run tradition, offering a wide array of Bonito Del Norte presentations including their colorful, large format tins.
