Black truffle pieces are incorporated into the paste before the wheels are moved to the ripening room. During maturation, a thin white bloomy rind develops on the exterior. This rind facilitates the enzymatic breakdown of the interior, resulting in a transition from a firm core to a supple texture. Small-batch production ensures the ratio of truffle to cream remains balanced throughout each individual wheel.
