Beehive Cheese Company produces this cheddar in Uintah, Utah, using milk from a family dairy. The creamery processes the fresh milk daily before adding vegetarian rennet. After the cheese blocks mature, the exterior rind is rubbed with a powder of imported porcini mushrooms. This traditional aging method allows the mushroom character to cross into the outer layers of the wheel, establishing an excellent balance between the paste and the rind.
