Grotte Tartufo begins as a uniquely sweet and savory American Asiago, aged for over a year in Caputo’s Cheese Caves. In the final months, wheels are carefully removed, coated in our housemade white truffle butter, then hand-finished with black truffle shavings before returning to the cave for a final, transformative rest. The result is rich, decadent, and unforgettable; occasionally crunchy with an easy crumbliness. Those sweet, toasted nut flavors we know and love are now perfectly balanced with deep umami flavor and intoxicating truffle aroma.
