This bloomy blend is crafted with thistle rennet, imparting a unique and delicate flavor profile. Rocky Mountain Sky is purchased as a young, unaged product from Lark’s Meadow Farm, just three hours north of Caputo’s. The aging process is meticulously managed by Caputo’s affineuse, Antonia Horne, resulting in a truly remarkable cheese.
