Craft & Origin
Founders Seth and Mic Cripe source the striped grey mullet near Anna Maria Island using hand-thrown cast nets. The roe sacs are washed, salted, massaged by hand to eliminate air pockets, and pressed. The roe is then air-dried to an optimal density, preserving a coastal preservation technique. This meticulous process mirrors the centuries-old methods found across Europe.
