The pumpkin seeds added to this bar come from the Thick-Seeded Pumpkin variety (Cucurbita argyrosperma), or Xka'o xtoop in Mayan. They are cultivated by the network of producers in southeastern Yucatán, a group of Indigenous communities that work with the non-profit organization: El Hombre Sobre la Tierra.

These seeds have been part of the Slow Food Mexico Presidium list since 2016, as part of its mission to promote the production and consumption of sustainable foods that improve the quality of life of Mayan communities.

For this edition, the seeds are paired with 63% cacao chocolate from Soconusco (Chiapas) with a touch of epazote and salt, flavors that immediately transport us to the Yucatán Peninsula.
