Craft & Origin
Pacific oysters are cultivated on Ekone’s independent farms in Willapa Bay using a suspended long-line method to eliminate sand and grit. After harvest, the oysters are steamed, shucked, and brined in small batches using two distinct habanero sauces. They are then placed on stainless steel racks and cold-smoked over maple chips before canning. This precise process yields a product that remains shelf stable for up to four years.
