The wild-caught coho salmon is sourced from independent fishermen and local tribes within the Pacific Northwest. Whole fillets are selected and brined using a traditional recipe that incorporates a touch of molasses. The fish is then gently cold-smoked over natural wood chips at the Ekone cannery on Willapa Bay, Washington. This processing method ensures the final product remains shelf stable for up to three years without artificial preservatives.
