Craft & Origin
These Mediterranean mussels are grown via regenerative aquaculture at the Totten Inlet farm in the South Puget Sound. Once harvested, they are cleaned, steamed, and lightly brined with a blend of organic garlic and onion powder. The mussels then undergo a traditional cold smoking process over natural wood chips. This method cures the shellfish while maintaining natural moisture, rendering them shelf stable for up to four years.
