Sometimes referred to as “The Queen” of clams, these delicious, snow-white morsels are harvested from October thru December using simple, generations-old tools and techniques.
Enjoy them straight from the tin with a dash of lemon or use the brine to make dashi, and pile the clams into bowls along with seaweed, chopped scallions, and a dollop of fermented soybean paste for a quick and heavenly miso soup.
