Description
Cheng Tng (roughly translated to clear soup) is a beloved traditional dessert in hot and humid Singapore. Sweet and refreshing, it is usually made with ingredients with cooling properties such as dried longan, persimmon and candied winter melon.
In this bar, Fossa used a smoky cacao from Pinalum Village located in Malekula Island, Vanuatu. The beans were naturally “smoked” by storing beside wood fire-dried copra, lending a flavour that reminds one of smoked longan. Mixed with a variety of seeds and fruits, the chocolate is nostalgic, and wonderfully soothing — just like the dessert that inspired it.
