Description
Fossa Lapsang Souchong tea chocolate is a craft bar incorporating pine-smoked black tea into a smooth chocolate base. It bridges the traditional tea-making heritage of Fujian with technical chocolate production.
Craft & Origin
Fossa sources this traditional black tea from Tongmu Guan in the Wuyi Mountains of China, the birthplace of Lapsang Souchong. The tea leaves are smoke-dried over pinewood fires, a traditional method that imparts a clean smoke profile. Working with tea curator Pekoe & Imp, Fossa grinds the whole tea leaves directly into the cacao during refining. This mechanical integration allows the volatile aromatic oils of the tea to bond cleanly with the cocoa butter.
Flavor & Texture
Distinct notes of pinewood smoke and dried longan. The texture is smooth.
How to Use
Allow a single square to melt slowly on the tongue to release the campfire aromatics.
Why We Like It
Fossa demonstrates remarkable restraint by ensuring the intense woodsmoke profile complements rather than masks the underlying cacao.
