In unison of their home of Massachusetts with Guatemalan cacao, Goodnow adds locally sourced maple sugar to dark chocolate, complimenting bright and fruity Asochivite chocolate.
Located deep in the mountains only reachable by footbridge, the San Juan Chivite village was once a part of a coffee farm. Abandoned after the Guatemalan civil war, the villagers have since dedicated their crop to cacao and cultivated fine flavored beans that Goodnow Farms fell in love with. With a new facility for fermentation and drying the beans, they can consistently produce high the quality cacao that is produced for this bar. Rather than using cane sugar, Goodnow uses maple sugar sourced from Northfield, MA, only an hour from their farm.
