This is a traditional Southern Spanish style Chorizo inspired by La Sierra de Aracena. This version from Incontro Cured is straightforward and elegantly simple. Never masking the natural cleanliness of the pork, but subtly elevating the unctuousness with Smoky/Sweet Pimenton De La Vera.
