Johnty Tatham produces Lucid chocolate in the Coastal Wairarapa region of New Zealand from a remote farm location. He employs a rigorous bean-to-bar process using Bellavista cacao sourced from the Qori Warmi co-op in the VRAEM region of Peru. This specific harvest comes from the co-op’s own farm, where the beans undergo a controlled six-to-eight-day fermentation in wooden boxes to develop deep, nuanced aromatics. The chocolate production focuses on preserving this delicate post-harvest character through precise roasting and controlled conching processes. Beyond technical excellence, this bar supports a co-op founded to empower local women through fine-flavor cacao as a legal alternative to coca farming. This approach yields a sophisticated bar that celebrates original vision and social impact through the expressive medium of Qori Warmi cacao.
