Lucid Chocolatier Ballevista 76%

$18.99

In stock

This single origin 76% dark chocolate bar is produced from a select harvest known as Bellavista. It highlights a specific genetic sub-genre of VRAE-99 cacao that emphasizes the structural intensity and floral complexity of the Peruvian highlands.

Craft & Origin

Johnty Tatham produces Lucid chocolate in the Coastal Wairarapa region of New Zealand from a remote farm location. He employs a rigorous bean-to-bar process using Bellavista cacao sourced from the Qori Warmi co-op in the VRAEM region of Peru. This specific harvest comes from the co-op’s own farm, where the beans undergo a controlled six-to-eight-day fermentation in wooden boxes to develop deep, nuanced aromatics. The chocolate production focuses on preserving this delicate post-harvest character through precise roasting and controlled conching processes. Beyond technical excellence, this bar supports a co-op founded to empower local women through fine-flavor cacao as a legal alternative to coca farming. This approach yields a sophisticated bar that celebrates original vision and social impact through the expressive medium of Qori Warmi cacao.

Flavor & Texture

Primary notes of jasmine and stone fruit. The texture is firm with a clean, sharp snap.

How to Use

Allow a small piece to melt slowly on the tongue to observe the progression of acidity and floral notes.

Why We Like It

We value the technical focus on this single-estate varietal and the social mission of the Qori Warmi co-op.
