Johnty Tatham produces Lucid chocolate in the Coastal Wairarapa region of New Zealand from a remote farm location. He employs a rigorous bean-to-bar process using Vintaged Chuncho cacao sourced from the Alto Urubamba co-op in Cusco, Peru. The cacao nibs are meticulously infused with Muscat wine—selected for its characteristic bold raisin-forward notes—before being dried and crafted into dark chocolate. This method allows the ancient heritage cacao to absorb the wine’s aromatic complexity while ensuring a clean, stable snap. The chocolate production focuses on highlighting this harmonious pairing through precise roasting and controlled conching processes, balancing the intensity of the 78% cacao with the delicate wine aromatics.
