This bar represents the Saigon Flagship in District 1, utilizing a 65% dark chocolate base crafted from a blend of single-origin Vietnamese cacao, primarily from the Tien Giang and Ba Ria provinces. The inclusion is fresh bird’s eye chili, which is candied in-house at the Maison Marou pastry kitchen to calibrate the heat levels before being integrated into the chocolate. This process ensures the chili maintains a supple texture and controlled piquancy that complements the high-cocoa base. The bar represents a technical exercise in balancing regional spice with the fruity acidity characteristic of southern Vietnamese cacao.
