The So Co La Edition is a series of bars tied to specific Maison Marou cafe locations and ingredients that define those neighborhoods. This bar represents Thao Dien, an international district in Ho Chi Minh City where Marou operates its flagship factory. Marou produces a 65% dark chocolate base using a blend of single-origin cacao from southern Vietnam. The inclusion, feuillantine, consists of paper-thin French style crêpe cookies rolled and folded by hand. Marou’s pastry chefs bake these cookies in-house using wheat flour, egg whites, and unsalted butter to ensure a precise, delicate crunch. The bar serves as a technical bridge between Marou’s bean-to-bar chocolate production and their professional pastry expertise.
