The anchovy is a small sea fish that lives in enormous shoals in the open sea. Some populations are concentrated near estuaries and others stay in the open sea. The anchovy is present in all the seas of the world and is particularly common in the South Pacific (Peru, Chile), in the South Atlantic, in the Mediterranean, and in the Indian Ocean (Malaysia, Indonesia). Martel flat fillets of anchovies come from Peru. The cold Humboldt current, which flows northward in these parts, is very rich in zooplankton, and accounts for its abundance. Preserved in salt and olive oil, these little guys are very flavorful, meaty, and boneless. Not overly salty in flavor, these are great for everyday use in the kitchen. The tin comes with a handy plastic lid to keep them fresh after opening.
