Pump Street sources cacao directly from the Tulloch Estate in St. Catherine, Jamaica, a historic family farm managed by Roger Turner. The beans undergo a unique, proprietary fermentation process utilizing sourdough starters developed by the chocolate maker. After roasting and grinding in Suffolk, England, the finished seventy-six percent dark chocolate coats thinly sliced, candied orange wheels. This method reflects traditional European confectionery standards.
