After harvest, the best fish are selected and cleaned portside before the fillets are grilled and then nestled by hand into the tin with premium olive oil, lemon, and a dash of salt. They’re exceptional as is, served on warm bread with pickles, but we also like them lightly flaked as a hearty, fish-forward addition to warm-weather pasta salads.
