Craft & Origin
Paccasassi, or sea fennel, grows wild along the rocky cliffs of Mount Conero in Italy. Once a staple for sailors due to its high vitamin C content, the plant is now a protected species, and Rinci sources theirs from controlled local cultivation. The aromatic succulent is harvested by hand and processed immediately to maintain its integrity. It is crushed and blended with extra virgin olive oil, lemon juice, and a small amount of anchovies to enhance its natural salinity. This production method respects the cultural history of Ancona while ensuring ingredient transparency.
