The darling of Rome, Genuine Fulvi is widely considered the most authentic Pecorino Romano. Full fat (not skimmed) milk makes this deliciously rich.
MILK: Pasteurized sheep’s milk
TASTING: Less salty and dry than other Pecorino Romano cheeses due to use of full fat milk. Pleasantly gamey and complex with a mild, briny saltiness.
SERVING: Shave over fresh fava beans, just like the Romans, grate over Southern Italian tomato sauces, or serve paired with honey after dinner.
