Description
Like a herd of bulls stumbling drunk on berry wine. Mead macerated blueberries stud this pork-marbled elk salame to offer bitter sweetness to the meat.
Pork marbling in the elk helps soften the texture of this slow cured masterpiece. A potent (and local to Smoking Goose) honey wine combines with fresh blueberries to create a salami intentionally outside of tradition.
