The orange/salt combination is a classic in the chocolate world. To’ak and CxM have designed this flavor using ingredients from the Galápagos Islands. Here they use the Italian confiserie technique known as “frutta candita,” which preserves the skins of oranges with sugar. The candied oranges are cut into small cubes, individually covered in cacao butter, and integrated into the chocolate along with salt crystals.
