Description
New harvest (novello) extra virgin olive oil from Umbria, released at the very start of the season. Nuovo is vivid, grassy, and alive, delivering the energy of the grove just when winter dulls the palate.
Craft & Origin
Nuovo is made from early-harvest olives picked and milled immediately to capture peak freshness and aromatic lift. Viola farms organically using biodynamic principles, including intercropping with legumes to strengthen soils and concentrate flavor. The oil is extracted using a centrifugal press and bottled quickly to preserve its electric color and phenolic vitality. We make a rare exception to air ship this oil so it arrives in December, when its brightness feels most needed.
Flavor & Texture
Neon green and intensely fresh with artichoke, wild herbs, and green olive. Lively bitterness and pepper bring clarity and momentum.
How to Use
Use raw on soups, vegetables, beans, bruschetta, or anything that benefits from a jolt of green life.
