The oil-rich fillets have been a part of diets in Eastern, Western and Northern Europe for over 2000 years and Wildfish is updating and ancient classic for the modern palate. Harvested in the Alaska’s storied Bristol Bay by local communities with purse-seine and gillnet boats, these small, pelagic swimmers are cleaned, cut into small pieces and smoked with sugar over Alder chips, giving them a bold umami taste and mildly crispy skin.

We recommend enjoying them over toasted rye bread with lemony yogurt and fresh dill, or giving them a rough mince and tossing with cold fusilli, shallot, and fresh herbs for a summery pasta salad.
