Lightly roasted and coarsely ground, Nicaraguan coffee is added to earthy Nicaraguan chocolate, lending a toothsome coffee crunch while retaining unique cacao flavor.
The coffee beans used for this inclusion chocolate are sourced from a roastery in Roxbury, MA, who import coffee grown on their family farm in Jinotega, Nicaragua. The cacao beans for this bar are grown around El Carmen in Nicaragua’s Central Highlands. Cultivated at about a dozen farms all owned by a single family, they sell their wet cacao to Cacao Bisiesto who then dries the beans in a process specifically designed for this and the single origin El Carmen bar.
